Cucumber in coconut gravy

Ingredients
Cucumber 1 cup (peel skin and finely chop)
Scraped coconut 1 cup
Green chillies 5 (Julian cut)
Shallots 4
Garlic 1 clove
Curd 1 cup
Dry red chillies 2 (broken)
Mustard seeds ½ tsp
Fenugreek seeds ¼ tsp
Salt to taste

Grind the coconut, shallots, garlic and mustard seeds to make a paste in a mixer bowl.
Cook the finely cut cucumber with salt and green chillies in water
On low flame, add the coconut paste and stir slowly adding curd to it.
Season the gravy with mustard seeds, fenugreek, broken red chillies and curry leaves. |
