Ghee rice

Ingredients

Basmati rice 2 cups
Water 4 cups
Green chillies 6
Large onion 3 (sliced)
Ghee 6 tbsp
Ginger 1 tsp (crushed)
Garlic 1 tsp (crushed)
Cinnamom 1 piece
Cardamom 4
Clove 5
Black peppercons ½ tsp
Cashew nuts 3 tbsp
Raisins 3 tbsp
Chopped coriander leaves

           

Method of Preperation

Wash and drain the rice and keep it aside.

In a deep bottomed vessel, pour ghee and fry out half of the onions till golden brown and sieve out.
Similarly roast out the cashews and raisins.

In the remaining ghee fry the cardamom, clove, black pepper cons, cinnamon for 1 minute on low flame.
Now add the crushed ginger, garlic and the remaining sliced onion. Sauté them well.

Add drained rice and fry for 3 minutes.

Pour the required amount of water, add salt and let it boil. Keep the flame on medium and cook the rice.

When the water is evaporated, the rice gets cooked.

Garnish the rice with fried cashew, raisins and fried onions.
