Ash gourd curry

Ingredients

Ash gourd 1 medium sized
Dry red beans ¼ cup (soaked 4-6 hrs)
Thick coconut milk 1 cup
Green chillies 6 (Julian cut)
Coconut oil 3 tbsp
Curry leaves
Salt to taste

           

Cut the ash gourd in thin slices
Cook the ash gourd with green chillies and salt in water.

Cook the dry red beans with salt separately and add to the cooked ash gourd on low flame

Pour the coconut milk to it, bring it to boil and remove from flame.

Add curry leaves and coconut oil and mix well.
