Unniyappam

Ingredients

Rice flour 2 cups
Jaggery (broken into small pieces) ¼ kg
Small ripe bananas mashed 1 cup
Seasame seeds ½ tsp
Roasted coconut pieces 3 tsp
Baking soda ½ tsp
Cardamoms 3
Dry ginger powder ¼ tsp
Salt ¼ tsp
Oil for frying

           

Method of Preperation

Heat the jaggery pieces in a pan with a little water & allow it to melt. Now strain the impurities and keep the melted jaggery aside.

Mix the rice flour, melted jiggery, seasame seeds, mashed bananas, baking soda, cardamom, salt & dry ginger powder.
Mix them well to have a better of dropping consistency.

In an uniyappam pan on medium flame, pour oil for frying.

When the oil becomes hot, pour the batter into each of the depressions in the pan.

Turn over the unniyappam’s with a fork so that both the parts are evenly golden in colour. Be careful to put them on medium flame.

The yummy unniyappams are ready to be taken out and served when they are brown.
