Vegetable Stew (Vegetable in Coconut Milk)

Ingredients

Potatoes 2 (small cubes)
Carrots 2 (small cubes)
Green peas ½ cup
Beans 5
Large onion 1
Green chillies 3
Cloves 4
Cardamom 3
Cinnamon stick 1 piece
Black pepper cons 1 tsp (crushed)
Thin coconut milk 1 ½ cup
Thick coconut milk ½ cup
Coriander leaves
Curry leaves
Salt to taste

           

In a pan pour 1 tsp oil and fry the spices. Add the vegetables and stir them for a few minutes.

Add the thin coconut milk with salt and let the vegetables cook

When the vegetables are coked add the thick coconut milk and when the gravy thickens, remove from flame

Season the curry with mustard seeds and curry leaves. Garnish with coriander leaves.
